Ingredients
  

  • 4 large russet potatoes or a 32-oz bag of frozen French fries
  • 2 tbsp olive oil or vegetable oil for frying
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • 8 slices thick-cut bacon or turkey bacon for a lighter option
  • 2 cups shredded cheddar cheese or a cheddar-Monterey Jack blend
  • ½ cup mozzarella cheese optional, for extra stretchiness
  • 2 green onions sliced (for garnish)
  • ¼ cup sour cream or ranch dressing for dipping, optional

Method
 

  1. Prepare the fries: If using fresh potatoes, peel and cut into ¼-inch thick fries. Soak in cold water for 30 minutes, then pat dry. Toss with olive oil, salt, and pepper. If using frozen fries, spread evenly on a baking sheet.
  2. Cook the fries: Preheat oven to 425°F (220°C). Bake fries for 20-25 minutes, flipping halfway, until golden and crispy.
  3. Cook the bacon: In a skillet over medium heat, fry bacon for 8-10 minutes until crispy. Drain on paper towels and chop into small pieces.
  4. Assemble the fries: Spread cooked fries on an oven-safe platter or baking sheet. Sprinkle shredded cheddar and mozzarella evenly over fries. Top with chopped bacon.
  5. Melt the cheese: Bake at 425°F (220°C) for 5-7 minutes until cheese is melted and bubbly.
  6. Garnish and serve: Sprinkle sliced green onions over fries. Serve immediately with sour cream or ranch on the side.

Notes

  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven at 375°F (190°C) for 5-8 minutes.
  • Make it spicy: Add jalapeño slices or cayenne pepper for a kick.
  • Vegetarian option: Swap bacon for sautéed mushrooms or vegetarian bacon bits.
  • Crispy tip: Bake fries on a wire rack to ensure air circulation and prevent sogginess.
