Ingredients
  

  • 1 lb ground beef
  • 2 medium potatoes peeled and diced small
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 4 –5 large flour tortillas
  • ½ cup sour cream optional
  • ¼ cup chopped green onions

Method
 

  1. Heat olive oil in a skillet over medium heat and cook diced potatoes until tender and lightly golden about 8–10 minutes.
  2. Add ground beef to the skillet and cook until browned while breaking it apart.
  3. Season with garlic powder onion powder paprika cumin salt and pepper and mix well.
  4. Cook for another 3–4 minutes until everything is well combined.
  5. Warm tortillas slightly so they are easy to fold.
  6. Place beef and potato mixture in the center of each tortilla then sprinkle cheddar and mozzarella cheese on top.
  7. Add sour cream and green onions if desired.
  8. Fold the sides and roll into burritos then toast in a skillet for 2–3 minutes per side until golden and crispy.

Notes

  • Cut potatoes into small cubes so they cook faster and evenly.
  • Add jalapeños or hot sauce if you prefer a spicy kick.
  • These burritos can be wrapped in foil and frozen for easy reheating later.
  • Serve with salsa guacamole or extra sour cream for the best flavor.
