Ingredients
  

  • 2 cups cooked pasta penne or rotini
  • 2 boneless chicken breasts diced
  • 3 tablespoons butter
  • 4 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Cook pasta according to package instructions and set aside.
  2. Season diced chicken with salt, pepper, and paprika.
  3. Heat butter in a large skillet over medium heat until melted.
  4. Add chicken and cook for 6–8 minutes until golden and fully cooked.
  5. Stir in garlic, Dijon mustard, lemon juice, red pepper flakes, and dried parsley.
  6. Add cooked pasta to the skillet and toss everything together until coated in the cowboy butter sauce.
  7. Sprinkle parmesan cheese and fresh parsley on top and mix gently.
  8. Serve warm and enjoy the rich buttery flavor.

Notes

  • Use rotisserie chicken for a quicker version.
  • Add heavy cream for a creamier sauce.
  • Toss in spinach or mushrooms for extra veggies.
  • Adjust chili flakes if you prefer a milder pasta.
