Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 1 cup sweetened shredded coconut
  • ¾ cup granulated sugar
  • ¼ cup all-purpose flour
  • ¼ tsp salt
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter melted

Method
 

  1. Preheat oven to 350°F (175°C). Mix sugar, flour, and salt in a bowl. Whisk in eggs, milk, cream, and vanilla until smooth. Stir in coconut and melted butter. Pour mixture into pie crust. Bake for 45–50 minutes until set and golden. Cool completely before serving.

Notes

  • Use fresh or frozen coconut for the best flavor; allow the pie to cool fully to set properly; it can be served with whipped cream.
