This soft and moist pistachio cake is perfect for any occasion. Easy to prepare, it combines the rich nutty flavor of pistachios with a tender crumb. Ideal for tea time, birthdays, or simple desserts, this cake is a crowd-pleaser.

Ingredients
  

  • 1 cup shelled pistachios
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • ½ cup plain yogurt

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
  • Grind pistachios into a fine powder and set aside.
  • In a bowl, mix flour, baking powder, baking soda, and salt.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, then stir in vanilla.
  • Mix in ground pistachios and dry ingredients alternately with milk and yogurt.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 30–35 minutes or until a toothpick comes out clean.
  • Cool in pan 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can toast the pistachios lightly for extra flavor and sprinkle some chopped pistachios on top for decoration.
