Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add diced potatoes and cook for 10–12 minutes stirring occasionally until golden and tender then remove from skillet.
Add remaining olive oil to the skillet and increase heat to medium-high.
Add steak bites in a single layer and sear for 2–3 minutes per side until browned.
Reduce heat to medium and add butter and minced garlic to the skillet.
Stir the steak in the garlic butter for about 1 minute until fragrant.
Return cooked potatoes to the skillet and sprinkle paprika thyme salt and black pepper.
Toss everything together until well coated and heated through.
Garnish with chopped parsley and serve immediately.
