Ingredients
  

  • 6 bone-in skin-on chicken thighs
  • lbs baby potatoes halved
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl combine potatoes, olive oil, minced garlic, Italian seasoning, garlic powder, paprika, salt, and pepper.
  3. Toss the potatoes until evenly coated with the seasoning mixture.
  4. Place seasoned potatoes in a large baking dish or sheet pan.
  5. Pat chicken thighs dry and place them on top of the potatoes.
  6. Sprinkle grated Parmesan cheese evenly over the chicken and potatoes.
  7. Bake for 35–40 minutes until chicken skin is crispy and potatoes are tender.
  8. For extra crispiness broil for 2–3 minutes at the end of cooking.
  9. Remove from oven and garnish with fresh parsley before serving.

Notes

  • Use bone-in chicken thighs for the juiciest and most flavorful results.
  • Cut potatoes into even sizes to ensure they cook evenly.
  • Freshly grated Parmesan melts better and adds richer flavor than pre-shredded
  • cheese.
  • Serve with a side salad or roasted vegetables for a complete meal.
