Ingredients
  

  • 1 lb potato gnocchi
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ¼ cup grated Parmesan cheese
  • Juice of ½ lemon

Method
 

  1. Bring a pot of salted water to a boil and cook the gnocchi according to package instructions.
  2. Drain the gnocchi and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add minced garlic and sauté until fragrant.
  5. Add spinach and cook until wilted.
  6. Stir in cooked gnocchi and toss gently.
  7. Season with salt, pepper, and red pepper flakes.
  8. Add crumbled feta and Parmesan cheese and mix well.
  9. Finish with fresh lemon juice and serve warm.

Notes

  • Use store-bought shelf-stable gnocchi to save time.
  • Add grilled chicken or shrimp for extra protein.
  • For a creamier texture, stir in a splash of heavy cream.
  • Fresh herbs like basil or parsley add extra flavor.
