Ingredients
  

  • 2 large chicken breasts diced
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups cooked jasmine or basmati rice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ red onion thinly sliced
  • ½ cup kalamata olives
  • 1 cup tzatziki sauce
  • ½ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Method
 

  1. In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  2. Add diced chicken and marinate for at least 15 minutes.
  3. Heat a skillet over medium heat and cook chicken for 6–8 minutes until golden and cooked through.
  4. Prepare rice according to package instructions if not already cooked.
  5. Chop tomatoes, cucumber, and red onion.
  6. Assemble bowls with rice as the base.
  7. Top with cooked chicken, tomatoes, cucumber, onion, and olives.
  8. Add a generous spoonful of tzatziki sauce.
  9. Sprinkle feta cheese and fresh parsley on top.
  10. Serve immediately and enjoy.

Notes

  • Marinate chicken longer (up to 4 hours) for deeper flavor.
  • You can swap rice with quinoa or cauliflower rice for a low-carb option.
  • Grill the chicken instead of pan-cooking for a smoky taste.
  • Store leftovers in airtight containers for up to 3 days.
