Ingredients
  

  • 1 package potato gnocchi
  • 2 cups fresh spinach
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • ½ cup crumbled feta cheese
  • ¼ tsp black pepper
  • ¼ tsp red chili flakes
  • Salt to taste
  • 2 tbsp grated parmesan cheese optional
  • 1 tbsp lemon juice

Method
 

  1. Boil gnocchi according to package instructions until they float to the top then drain.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add fresh spinach and cook until wilted.
  5. Add cooked gnocchi to the skillet and toss well.
  6. Sprinkle feta cheese black pepper chili flakes and salt.
  7. Add lemon juice and mix gently to combine.
  8. Top with parmesan cheese if desired and serve warm.

Notes

  • You can add cherry tomatoes for extra color and flavor.
  • Use whole wheat gnocchi for a healthier variation.
  • Add grilled chicken or shrimp for extra protein.
