Lemon Ginger Cookies Recipe

Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp grated lemon zest
  • 2 tbsp fresh lemon juice
  • ¼ cup molasses
  • ¼ cup crystallized sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a separate bowl, cream butter and sugar until fluffy.
  4. Add egg, lemon zest, lemon juice, and molasses; mix until combined.
  5. Gradually add dry ingredients to wet, mixing until dough forms.
  6. Roll dough into 1-inch balls, then roll in crystallized sugar.
  7. Place on baking sheet 2 inches apart.
  8. Bake 10–12 minutes until edges are firm and centers soft.
  9. Cool on baking sheet 5 minutes, then transfer to wire rack.

Notes

  • For extra zing, add a bit more lemon zest or drizzle with a lemon glaze after baking.
