In a separate bowl, cream butter and sugar until fluffy.
Add egg, lemon zest, lemon juice, and molasses; mix until combined.
Gradually add dry ingredients to wet, mixing until dough forms.
Roll dough into 1-inch balls, then roll in crystallized sugar.
Place on baking sheet 2 inches apart.
Bake 10–12 minutes until edges are firm and centers soft.
Cool on baking sheet 5 minutes, then transfer to wire rack.
