Ingredients
  

  • 2 cups graham cracker crumbs
  • ½ cup melted unsalted butter
  • 2 cups crushed pineapple well drained
  • 1 package 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • cups whipped topping plus extra for garnish
  • ½ cup pineapple chunks optional topping

Instructions
 

  • Mix graham cracker crumbs with melted butter until combined.
  • Press mixture firmly into the bottom of a 9x9-inch dish to form the crust.
  • Beat cream cheese until smooth and creamy.
  • Add powdered sugar and vanilla extract and mix until well combined.
  • Fold in drained crushed pineapple.
  • Gently fold in whipped topping until light and fluffy.
  • Spread the mixture evenly over the crust.
  • Refrigerate for at least 4 hours or until fully set.
  • Garnish with extra whipped topping and pineapple chunks before serving.

Notes

  • • Drain pineapple very well to avoid a watery filling.
  • Chill overnight for the best texture and flavor.
  • You can substitute digestive biscuits for graham crackers.
  • Add toasted coconut on top for extra tropical flavor.
