Ingredients

  • 12 oz spaghetti or fettuccine pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
  • 2 tablespoons chopped fresh parsley

Method

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in chicken broth and heavy cream and bring to a gentle simmer.
  4. Add uncooked pasta to the pot and stir to submerge it in the liquid.
  5. Cook pasta while stirring occasionally until tender and the sauce begins to thicken.
  6. Stir in grated Parmesan cheese and Italian seasoning until melted and creamy.
  7. Season with salt, black pepper, and red pepper flakes if desired.
  8. Continue stirring until the sauce coats the pasta evenly.
  9. Remove from heat and garnish with chopped parsley.
  10. Serve warm while creamy and delicious.

Notes

  • Stir the pasta occasionally to prevent sticking while it cooks in the sauce.
  • Freshly grated Parmesan melts smoother and gives the sauce better flavor.
  • Add cooked chicken, shrimp, or sautéed mushrooms for extra protein.
  • If the sauce becomes too thick add a splash of broth or milk to loosen it.
